Akulumbo - the new Nychteri from Paris Sigalas


White wine made from overripe Assyrtiko grapes, harvested one month after the regular harvest time.

The grapes come from selected blocks from a single vineyard. The vines are more than 60 years old.

It is fermented for 24 months in amphorae (750-/1600l) and matured sur lie (on the lees).

A unique wine with the ultimate expression of the variety, resulting in a richer and more intense Santorini Assyrtiko with full body, persistent flavor and high alcohol content.

Origin of the name: The locals in Oia called the underwater volcano Kolumbo as Akulumbo.

The wine has an aging potential of over 10 years.

Goes with: shellfish, grilled fish and molluscs, fried cod, white and lemony meats, mushroom dishes, risotto or pasta with roe and smoked fish.

Alcohol content: 15%


Annual production year 2021: 1800 bottles.
