Expansion: Classic white wine vinification in steel tanks
Color: light straw yellow with green reflections
Nose: fresh white wine with aromas of lemon and lime, some honeydew melon and herbal spices
Taste: Smooth on the palate, tangy with a mineral note, spicy and melty, quite strong body, noticeable alcohol on the palate, melty finish with notes of dried apples. Especially in older vintages, the honey notes come to the fore, reminding the Assyrtiko of a German or Alsatian Riesling. The mineral note is the result of the Santorini terroir.

Assyrtiko
Assyrtiko is one of the international class grape varieties. It is native to Santorini and has found its way to the mainland from there. The first plantings were carried out in Australia in 2012.
The Assyrtiko loves it hot and dry. It has a high alcohol content, a good balance with the fresh, clear acidity.
The Assyrtiko, also from the steel tank, has great aging potential, sometimes 5-10 years. Winemakers say that steel tank wines should be drunk after 1-2 years, not sooner.
The Assyrtiko has a distinctive character and high minerality.
The harvest in Santorini takes place at the beginning of August.
Typical: citrus aromas
Aged wines have more solid body and great aromatic complexity.
Older vintages are reminiscent of Riesling.
